Vegetables that Count as Maror – Vol. III, pp. 158 - 159
Why did they call the Maror both 'Hasah' and 'Hazeret'?
The reason that Hazeret is called both 'Hasah' and 'Maror' is a linguistic inference, as if to say that "God brought us back to Him [hehzirenu], took merciful pity on us [has], and redeemed us from slavery and bitterness [merirut]" 5).
It is the custom in Ashkenaz that instead of Hazeret, they eat a type of dry root that is called Khreyn in Yiddish, and it is spicy like mustard, with no bitter taste. Sephardic practice is to use Hazeret.
I have already written above that the reason that our practice is to use Hazeret is because it affords many meaningful word plays. Not only is it related to the word for bringing us back [hazarah], but it is also called 'Hasa' in Aramaic and evokes the idea of 'merciful pity,' as if to say that "God rendered his mercy and saved our ancestors." This is similar to what Rabbi David Abudarham wrote 1) in the name of the Yerushalmi regarding the linguistic inference of the egg and shank bone: in Aramaic they are called Be'ah and Dera'a, as if to say that "God desired [ba'ah] to take us out of Egypt with an outstretched arm [dera'ah]."
Because of this, it is quite strange to me that the Ashkenazim are accustomed to use Khreyn, for this word is related neither to 'mercy' nor to 'bringing back.' Subsequently, I found a responsum of the Haham Tsevi 2) who was reared and educated amongst the sages of the Sephardim, and identified which species the Hazeret is:
In the German and Polish lands, which are cold, the Hazeret cannot be obtained on Pesah, and thus they do not have the custom to eat it for the requirement of Maror; alternatively, they may be unschooled in the the interpretation of vegetable names and believe that Khreyn is Maror... Much detriment arises from this: firstly, its caustic nature makes it painful to eat; and secondly, people either eat less than a half kezayit of it and fail to fulfill the requirement of Maror, or they do eat a kezayit of it out of genuine faith in God and risk hurting themselves. Because of this, everyone whose heart is guided by the fear of God should purchase Hazeret – which is called lettuce – even if it costs him dearly, so that he might fulfill the requirement of Maror properly.

Regarding the requirement of Maror, Rabbi Abraham ibn Ezra 3) explained that

Intense humidity arises in the Land of Egypt from the waters of the Nile. To ensure that rain would not fall, their custom was to eat all kinds of bitter herbs, grasses, and mustards at their meals... since it counteracted the climate. [For our part,] we can rely on our ancestors of blessed memory, who explained that the Maror commemorates the verse "and they embittered their lives" [Exodus 1:14].
